Step 1
Preheat the oven to 200 degrees and prepare a baking tray or heatproof serving dish to keep the pancakes warm. In a small bowl, combine the flour, sugar, baking powder, and salt and set aside.

In a medium bowl, whisk together the milk, melted butter (or oil), and egg. Add the dry ingredients to the liquid mixture and mix gently (do not overmix; a few small lumps are acceptable).

Heat a large skillet (can be oil or cast iron) or grill over medium heat. Fold up a paper towel and moisten it with oil; Carefully rub the pan with oiled kitchen paper.
Step 4
For each pancake, pour 2 to 3 tablespoons of batter into the pan and spread the batter into a round shape using the back of the eyebrow (a large pan will hold 2 to 3 pancakes).
